"Stir Thai"
Basically, Josh is the sweetest husband on the planet. He helps me clean, he cooks me food, and takes care of me on the off chance that I get sick. He'll watch my favorite TV show with me, tells me my crochet is looking good, and encourages me to stick to our diet and meal plans.
Last week, we went into the pantry to figure out what to make for dinner. There were a few items that we needed to hurry and eat before they went bad, so Josh opted to create his own recipe: a mixture of Stir Fry and Pad Thai. He gathered the rice noodles, potatoes, bell peppers, onion, black beens, and eggs and started mixing everything together. Once it was all together, he dumped in some chicken broth and sprinkled on whichever spices smelled "right" for the dish.
We sat down at the dinner table. Said a prayer. And took a bite.
Josh compared the texture of his creation to that of worms in dirt.
Let's just say, I was done. But, Josh ate this food every day for lunch for the next few days. Thanks for taking one for the team, hon! The next night, I attempted to one-up him with a yummy chicken casserole... but neither of us liked that very much, either.
Last week we went and saw Britney (Josh's sister) in her performance of Cinderella. Her school, Liahona, puts on multiple shows during the school year and they always turn out fantastic, but this one was by far my favorite. Saturday we went to the BYU Vocal Point concert at BYU with my family. It was so much fun to see them live! Sunday was filled with mission homecomings, naps, and board games. We've enjoyed playing games with both of our families since Christmas.
Yesterday, we went to my parents for dinner and had mom's yummy pineapple salsa chicken tacos. She also made fruit salsa with cinnamon chips but we aren't eating sugar right now :(. This weekend was filled with temptation. All I wanted was sugar. Good thing Josh keeps me in check! Since it was a holiday, Josh didn't have work, but I did (unfortunately). Josh had planned on going in to work anyway to get some things prepared for the new semester he started today at Maple Mountain, but stayed home to clean the entire house. I'm so thankful for a husband who is so sweet, kind, generous, and thoughtful! We hadn't finished cleaning everything up from Christmas break, so this was no easy task for him to accomplish. But, what a total sweetheart!
I've been called in to two more callings in addition to Nursery Leader. I was asked to be on a Relief Society Committee and be the Assistant Girls Camp Director. I'm so excited. I remember counting down the days until it was time to leave for Girls Camp. I'm excited to get to know the Young Women in the ward better! I have a feeling this is going to be a busy, busy year for both of us!
Josh is currently getting his group ready for Festival and solo & ensemble. Utah Wind Symphony rehearsals started up again, which take Josh from me every Wednesday until 11:00, but he absolutely loves playing with this group and I absolutely love hearing their beautiful music. We're getting excited about the upcoming marching band season and have started talking ideas through. We can't wait to see what happens this season with Maple Mountain!
